Tomme

Rhymes with Home

Tomme is French for "wheel of Cheese."  It has a butter and milk nose.  The rind  is earthy with rustic cellar aromas of wet stone and wood.  The paste is fine, creamy and elastic near the rind.  The flavor is mild, slightly sweet, nutty, buttery and smooth.


Sage Cheddar

Sage adds a fragrant herbal aroma and a slightly sweet taste to the Cheddar flavors.

Garlic and Chive

Chive gives a slight onion flavor with just enough garlic to compliment it. This cheese is reminiscent of a traditional English Cotswald.

Tomato and Basil

Cheddar is the perfect backdrop for the lightly sweet flavor of tomato which lingers into refreshing basil on the back palate.

Smoked Cheddar

Hickory wood chips give the traditional Cheddar a sweet and delicate smokey flavor and aroma.

Gouda

This semi-soft cheese has a creamy rich flavor with a slightly sweet tang and a buttery finish.

Smoked Gouda

The creamy texture of Gouda is imparted with somewhat sweet smokey flavors of hickory.

Caerphilly

Our most popular cheese is modeled after a Welsh cheese known as Caerphilly.  the flavors are like a marriage between a sharp cheddar and parmesean.  Fully flavored and tangy with a salty piquant finish.

Chipotle Jack

The mildness of Monterrey Jack is kicked up a notch with smoked jalapeños, also known as Chipotle peppers.  This gives the cheese a little bit of spiciness to go with the clean taste of jack.
